Kroger is hosting a Taste of Mexico in our stores, where customers can sample the finest Mexican cuisine we have to offer. Mexican foods are one of the fastest growing and most popular cuisines in the US today. We are excited to offer our customers a three week immersion experience with authentic Mexican foods and flavors for family, friends, dinner parties, and special occasions.

Chicken Nachos
Yield: 6 Servings

Ingredients:
1 tablespoon Kroger canola oil
2 garlic cloves (minced)
½ onion (chopped)
2 cups Kroger rotisserie chicken (shredded)
1 cup Kroger mild salsa
3 cups Kroger white corn tortilla chips
8 ounces shredded Kroger cheddar cheese
4 ounces shredded Kroger Monterey Jack cheese
1 medium tomato (diced)

Method of Preparation:
1. Preheat oven to 350˚
2. In a large nonstick skillet over medium heat, heat the oil. Once the oil is hot, sauté the onion and garlic.
3. Add the chicken. Sauté until heated through. Add salsa and cook for 2 to 3 minutes.
4. Arrange tortilla chips on a large baking sheet or oven safe serving tray. Spread the chicken mixture evenly over the chips then sprinkle evenly with cheeses and diced tomato. Bake for 10 minutes or until cheese is melted.
5. Serve while hot

Food Safety Tip:

Keep ready to eat foods, fruits, and vegetables separate from raw meats while storing in the refrigerator. Juices from the raw meats could contaminate ready to eat foods.
