Chef Jason Jimenez seems to enjoy playing around with classic flavors. For fall, he created this Butternut Squash Hummus recipe for newly opened Likewise. This month he’s serving carrot hummus with a coriander-mint relish and a pea shoot and almond garnish. The butternut squash version is slightly sweet from both the squash and the maple syrup. It’s actually a lighter take on the classic bean-based hummus recipes you’re accustomed to. But the relishes and garnishes take things up to a whole other level.

Jimenez also has a tip for the home hummus-maker. “Blend the hummus while the cooked beans and sauteed squash are still hot, adding a little of the cooking liquid to help them puree. Your hummus will come out very smooth if you blend while hot.”
