Fox Bros. Bar-B-Q

Jonathan and Justin Fox served a barbecue-centric menu at Smith's Olde Bar until Labor Day last year, when they took their smoked-meat show solo with Fox Bros. Bar-B-Q. Jonathan likes to call the pulled pork "a mix of where I'm at and where I'm from." The pork is a nod to Southerners' pig proclivity, and the sauce, served very deliberately as a condiment on the side, has a Texas kick to it. Boston butt is set in the smoker in the parking lot and locked up overnight to cook away slowly over hickory chips. Up to a half pound is piled onto a toasted sesame bun and served with one yummy side. The sandwich is a $6.95 lunch special 11 a.m.-3 p.m. Monday-Friday with a bag of Zapp's chips. Daddy D'z BBQ Joynt

For real Southern barbecue intown, many Atlantans turn to Daddy D'z. So do a few others, including The New York Times, the Food Network and Rolling Stone magazine, who've thrown accolades at the meat, homemade sides and humble ambiance. The pork is smoked over hickory and oak until it's not quite done, then placed in a pan and sealed with aluminum foil to slowly cook through. Holy Smokes Barbecue

Co-owner Kenny Garren named his biggest sandwich after an influential man. His Uncle Red taught him to make barbecue when he was growing up on a farm in Valdosta. Pictures of the family farm are displayed around the restaurant. The Uncle Red sandwich consists of 6 ounces of slow, hickory-smoked Boston butt with just a hint of sauce served on Texas toast. Sam & Dave's BBQ-1 and 2

Competition 'cue masters Sam Huff and David Poe own two Marietta locations for a pulled pork sandwich fix. Operating hours are posted, but they mean business when they say they close up shop when the meat runs out. "We serve fresh meat only," manager Stuart Baesel says. The sandwiches are the most popular menu item, Baesel says. Boston butt is seasoned with a dry rub then smoked over hickory logs for a minimum of 14 hours.
