One of the coolers at Mamajuana Restaurant and Lounge in Lilburn was out of order during a recent health inspection and all the food inside had to be thrown out.
The air temperature was at 57 degrees, and food temperatures were also in the 50s, the inspector noted.
Also, multiple live roaches were observed in the kitchen and pest control documentation was not provided.
Mamajuana failed the routine inspection with 50/U. Previous scores were 96/A and 74/C.
The inspector said the cooler must be repaired and the facility serviced by pest control before the follow-up inspection.
Among other code violations, improper cooling methods were used for potentially hazardous foods. Containers of beef were discarded because they had been cooling too long and were still at unsafe temperatures. The staff was retrained on the correct cooling procedures.
Two containers of cut lettuce and containers of empanadas were both stored uncovered in coolers. Other cold food items in several coolers were stored incorrectly and subject to contamination. Eggs were placed over fresh produce, raw beef was over raw pork, raw shrimp was over some juice and raw fish was over vegetables. The foods were re-arranged.
Multiple non-contact food surfaces throughout the facility, such as shelving, bulk storage, and cooler bottoms, were dirty with dried food debris and residue. The hot water in one of the employee hand sinks had been turned off, the inspector said.
Mamajuana will be re-inspected.
