Some prepared and wrapped salads at a Steak ‘n Shake in Duluth were in a cooler that had a leak, and water had accumulated around them, a Gwinnett County health inspector said.

There was a pool of water inside the cooler, and inside a pan with the salads. The food was discarded. The cooler was also dirty with soil accumulation and the inspector said the food needed to be kept in a clean, dry location away from contaminants.

Steak ‘n Shake, 2110 Pleasant Hill Road, had other equipment problems, too. The health code violations led to a failing score of 42/U on the routine inspection.

Two prep coolers were not maintaining the proper temperature, and a lid was missing on one prep cooler, according to the inspection report.

Sticky, slimy residue had accumulated around the chopping pad of an onion chopper. Clean dishes still had sticky residue on them. Walls, equipment and shelving were dirty with food debris. A mildew-like substance was on shelving in the walk-in cooler.

Also, black specks of debris were found on ice in the ice machine. The ice was discarded.

Points were also taken off because food prep employees were touching food with bare hands, or not washing hands when contaminated. The cook used his cell phone while putting on gloves and without washing hands. One employee topped a milkshake with a cherry with bare hands. The cherry was discarded, along with the other cherries in the container.

Steak ‘n Shake will be re-inspected.
