Zen on Ten, an Asian bistro and sushi bar on Atlanta’s Northside Drive, failed a recent routine inspection because the staff was preparing sushi with bare hands.

Fulton County health inspector took off points because ready-to-eat foods cannot be directly touched with bare hands and food employees were not wearing gloves to prepare the rolls.

Points were also taken off because the restaurant was unclean. The inspector said every surface throughout the facility was soiled, including the handles of containers. The ice machine had black and pink slime on the inside of the unit around the chute. The staff was told to clean and sanitize the machine.

The floors underneath and behind the restaurant equipment, and every surface of equipment and supplies, need cleaning, the inspector said.

Zen on Ten, 1000 Northside Drive, Atlanta, scored 50/U on the routine inspection. Previous scores were 91/A and 79/C.

In other code violations, food was stored improperly in several areas. Raw meat was in the top section of the prep cooler, instead of in the bottom separated from produce and other ready-to-eat foods.

Some stored foods were uncovered, including items in dry storage. Points were taken off because some prepared foods were not labeled with disposal dates, and not all containers were labeled with their contents.

Sushi rice was stored at room temperature without documentation on when it was cooked and how long it had been out. Also, frozen food was sitting out on a counter thawing at room temperature.

Zen on Ten will be re-inspected.
