A: Simply put, rennet contains enzymes that transform milk into cheese, separating curds and whey. There are different types of rennet but, for ages, the most popular type used in European cheese making is the rennet that comes from the stomach lining of mammals, often calves. There are other options, including, genetically engineered, vegetable and microbial rennet. The most mainstream form of rennet comes in the form of Junket rennet tablets, which are often used for making ice cream, custard and even cheese.
