Q: My friends and I have eaten lunch at Aqua Terra Bistro for several years. We love the potato salad there! We would be ever so grateful if you could get and print the recipe. Thank you! — Susan Clayton, Lawrenceville

A: Manager Christy Legault sent us this recipe for a dish she describes as "pretty basic, but people seem to love it. It has stayed on our menu for almost 15 years now." The recipe was created in 2000 by her husband Brian who is the restaurant's executive chef.

Aqua Terra Bistro’s Potato Salad

2 1/2 pounds small red potatoes, quartered

1/2 cup diced green pepper

1/2 cup diced red onion

1/2 cup mayonnaise

2 tablespoons Creole mustard

Salt and pepper

Bring a large saucepan of lightly salted water to a boil. Add potato quarters and cook until tender, about 15 minutes. Drain and allow to cool.

In a large bowl, mix together red pepper, green pepper and red onion. Stir in mayonnaise and mustard. Taste for seasoning. Stir in potatoes. Combine well and taste for seasoning again. Legault suggests the salad requires a good bit of salt, up to a teaspoon. Chill thoroughly before serving. Makes: 10 cups

Per 1-cup serving: 175 calories (percent of calories from fat, 47), 3 grams protein, 22 grams carbohydrates, 2 grams fiber, 9 grams fat (1 gram saturated), 4 milligrams cholesterol, 83 milligrams sodium.
