We’ve run many hummus recipes in this column over the years, but this is the first time we’ve run a recipe in which the chickpeas are uncooked.

Jackie Hardin, granddaughter of Richard Thomas who founded R. Thomas Deluxe Grill back in 1985, was happy to share the recipe and the story of its creation. “We had started making the transformation to healthy/fresh food. The original recipe for our hummus kept spoiling quickly. Our executive chef, John Vo, knew that raw chickpeas would store longer and that raw food is a much healthier option. He played around with the chickpeas for a few weeks, letting customers and employees try it. This is the recipe that was loved the most.”

The higher powered your blender or food processor, the smoother the hummus will be. But because the dried chickpeas are soaked, but not cooked, it will probably remain a little chunky.

R. Thomas Deluxe Grill’s Hummus
  • 1 cup dried chickpeas
  • 3/4 cup chopped cilantro, plus more for garnish
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons cumin
  • 1/4 teaspoon cayenne, or to taste
  • 1/4 teaspoon sea salt
  • In a large bowl, cover chickpeas by several inches of water. Cover and let sit overnight. Drain and rinse.
  • In the bowl of a food processor, combine drained chickpeas, cilantro, olive oil, lemon juice, garlic, cumin, cayenne and salt. Process until smooth. Taste for seasoning, adding more cayenne or salt, if needed. Refrigerate until ready to use. If desired, garnish with chopped cilantro. Makes: 2 1/2 cups
