Food prep employees at J. Buffalo Wings in Forsyth County were not changing gloves and washing their hands when switching tasks in the kitchen during a recent routine inspection, an inspector said.

After prepping chicken, an employee rinsed gloved hands in the three-compartment sink then proceeded to wash dishes. Another employee was observed slicing ready-to-eat foods without wearing gloves.

Also, food service gloves were not being discarded after each use, the inspector said. Gloves used to mix chicken were stored on a shelf to be reused. Once removed, the single-use gloves must be discarded.

J. Buffalo Wings, 911 Market Place Blvd., Cumming, received a failing score of 39/U, its second failing health score this year. The restaurant scored 50/U in April, then improved to an 80/B on the follow-up inspection.

In other code violations, food was not covered in the walk-in freezer or in the cooler. Utensils were not being washed, rinsed and sanitized before storing away as clean. Dining tables were not being sanitized properly, the inspector said.

Raw chicken was being thawed in the at meat sink at room temperature. Gyro meat was sliced off a spindle and stored at room temperature to cool, but no cooling log was kept. Some of the wings were not being held at a safe temperature.

J. Buffalo Wings will be re-inspected.

In other news: A recently featured Forsyth County restaurant improved its health score during a follow-up inspection. JAZ Chinese Cuisine, 270 Saint Claire Drive, Alpharetta, scored 81/B.
