When it comes to the greatest inventions of all time, tacos are right up there with burgers and the lightbulb.
Flavorful, quick and easy to make and seriously delicious to consume, they're a great go-to spring dinner, for groups of any size. This month, we invite you to expand your taco horizons and try a recipe that basically tastes like a coastal celebration in your mouth: Fiesta Shrimp Tacos.
Shrimp and tacos are a natural duo. The shellfish is light but can hold its own when paired with bold flavors. In this version, sweet and crunchy popcorn shrimp is tucked into a soft tortilla with a drizzle of zesty cream sauce on top. These are best consumed with a cold drink and wedge of lime, particularly on National Shrimp Day (May 10)!
Fiesta Shrimp Tacos
Ingredients:
1 18 oz package SeaPak® Popcorn Shrimp
10 flour tortillas, heated according to package directions
1 package (14 oz) coleslaw mix (shredded cabbage)
8 oz white cheddar cheese, shredded
1 large tomato, diced
2 cans sliced black olives
Lime wedges, if desired
Sauce:
8 oz sour cream1 package (1 oz)
ranch dressing mix1 packet (1 1/4 oz)
taco seasoning
Milk, as needed to thin
Instructions:
Bake shrimp according to package directions.
Combine sauce ingredients, adding taco seasoning to taste. Thin sauce, if needed, with 1-2 tablespoons of milk. Spread a tablespoon of sauce over each tortilla. Top with shredded cabbage, cheese, tomato and olives. Top with cooked shrimp. Serve with lime wedges, if desired.
