Q: I moved here from Miami years ago and was quite the tuna salad snob until I discovered the tuna salad at Rusty Rooster’s/Folks, which I absolutely loved! It seems every place else that offers tuna salad in Georgia includes sweet pickles/relish or else it’s just bland. I don’t know what Folks put in theirs, but I crave it and would really appreciate it if you could get the recipe. — Lisa McGee, Cumming

A: Tuna salad is a classic whether served as a sandwich filling or as a scoop on a salad plate. Eric Walksler of Folks Southern Kitchen sent us the recipe for the tuna salad that was served at their former Rusty Rooster Cafes. Just for the summer, Folks is serving this tuna salad at all 11 locations in metro Atlanta.

McGee will be surprised to see that the recipe features pickle relish along with the chopped celery and onions. Maybe it was the addition of the Cajun seasoning that she found so appealing.

Rusty Rooster’s Tuna Salad

Hands on: 10 minutes Total time: 10 minutes Serves: 4

3 (5-ounce) cans tuna packed in water, well drained

1/2 cup chopped onion

1/4 cup chopped celery

1/4 cup pickle relish

3/8 cup mayonnaise

3/8 cup ranch dressing

3/4 teaspoon Cajun seasoning

1/4 teaspoon fresh lemon juice

1/4 teaspoon black pepper

1/4 teaspoon salt

In a medium bowl, combine tuna, onions, celery and relish. Mix well.

In a small bowl, combine mayonnaise, ranch dressing, Cajun seasoning, lemon juice, pepper and salt. Mix thoroughly and add to tuna mixture. Fold together lightly. Refrigerate until ready to serve. May be prepared up to 3 days ahead.

Per serving: 416 calories (percent of calories from fat, 64), 29 grams protein, 9 grams carbohydrates, 1 gram fiber, 31 grams fat (5 grams saturated), 43 milligrams cholesterol, 1,032 milligrams sodium.
