Cook rice in microwave according to instructions on package. In the meantime, heat oil over medium heat in frying pan and saute zucchini and red pepper until just softened, about 5 minutes. Toss rice, zucchini, red pepper, tomatoes, goat cheese, herbs and lemon juice in large bowl, then season to taste with salt and pepper. Serve warm or at room temperature.
