Q. I went to Genki Sushi on Roswell in Buckhead recently. I would love to have the recipe for the noodles with sesame/soy they served as a tasting when we got there. It was very good. Thank you. Joy Rousso, Atlanta

A. “We are excited to know that people want to know what's in our little welcoming dish,” said Saffold Barksdale of Genki Sushi. Servers provide this dish to each guest when they’re first seated. “It's our way of welcoming you to Genki,” she said.

Genki Sushi Somen Noodles with Sweet Soy Sauce

Hands on: 10 minutes

Total time: 20 minutes

Serves: 8

1 pound somen noodles

1/4 cup soy sauce

3 teaspoons grated fresh ginger

1 tablespoon granulated sugar

Sesame seeds for garnish

In a large saucepan, cook the noodles according to package directions. Drain and cool.

In a measuring cup, combine soy sauce, ginger and sugar. Adjust amounts if you prefer it saltier or sweeter. Pour over noodles and stir to mix thoroughly. Chill. Serve noodles cold garnished with sesame seeds.

Per serving: 213 calories (percent of calories from fat, 2), 7 grams protein, 44 grams carbohydrates, 3 grams fiber, trace fat (no saturated fat), no cholesterol, 1,559 milligrams sodium.
