The front-of-house staff at Drift Fish House & Oyster Bar practices the art of hospitality.

“You compare it to someone coming into your home: You open doors for people, give them something to drink. On the way out, you don’t wave goodbye from the sofa,” said Jason Raymond, Drift’s general manager and director of operations.

His team adheres to an unobtrusive style of service.

“I don’t care if you serve from the left or right, just never interrupt the guest. You never want to break up a conversation.”

Other details include offering purse hooks, writing a personalized note to people celebrating special occasions, replacing a dropped napkin with a fresh one and keeping notes on diner preferences.

“It doesn’t cost us a cent. It just takes effort,” Raymond said.
