The sushi chef at a Pacific Spice restaurant in Forsyth County wasn’t changing gloves or washing hands in between making the rolls and working with raw fish.

Instead, the employee wiped hands on a wet paper towel. The inspector took off points, discarded the paper towel and had the employee change gloves to prevent cross contamination.

Pacific Spice, 3120 Mathis Airport Parkway, Suwanee, received a failing health score of 49/U. This was a follow-up inspection. The restaurant had previous scores of 73/C and 83/B.

Points were also taken off for having no invoices or original packaging for fish to verify it was from a safe source. Management was advised to stop serving the raw fish until documentation is provided.

In other code violations, raw meat was improperly stored with ready-to-eat foods.

Dishes and tables were not being sanitized properly. The dishwasher did not have any measurable amount of chlorine, and one of the buckets of water being used to clean off the dining tables did not have any sanitizing solution.

Pooled raw eggs, kept in a container on the counter, were at an unsafe temperature. Cooked chicken in a prep cooler was also at an elevated temperature. Both were discarded.

Sushi rice was not time stamped even though the rice had been removed from a heat source. The three-compartment sink had no hot water and needed repairing.

Pacific Spice will have another follow-up inspection.
