At Yuki Teriyaki & Sushi in Conyers, food was not separated and protected from cross contamination during a recent routine inspection.

An employee was prepping raw shrimp above ready-to-eat sauces. The sauces were relocated.

Another employee was preparing a sushi roll that contained raw fish, then touched the sushi rice, wasabi and ginger and continued to prepare another cooked sushi roll without changing gloves and washing hands.

The Rockdale County health inspector said the manager in charge did not have active managerial control to prevent food-borne risk factors.

Yuki Teriyaki & Sushi, 1573 Highway 20, Conyers, scored 62/U, down from 100/A earned in December.

Points were also taken off for using an ineffective cooling method for cooked foods. Food was cooling in deep plastic containers with tight-fitting plastic wrap, instead of using shallow pans for rapid cooling, the inspector said.

The food was placed onto baking pans and moved to the walk-in freezer for rapid cool-down, according to the inspection report.

Among other code violations, sushi rice was being held on time control without written procedures. A liquid chemical lighter was stored directly above food on the reach-in prep cooler. The lighter was relocated.

Yuki Teriyaki & Sushi will be re-inspected.
