Learn to make eggs with truffles, a classic combination

The truffle deviled eggs at Southern Art and Bourbon Bar are addictive. Will they share the recipe? — Gabrielle Young, Atlanta
Deviled eggs are always a favorite and this version is particularly delicious. Truffles and eggs are a classic combination. These eggs are delicious even if you don’t add truffle peelings (although you can usually find American truffles in the produce section of Whole Foods Market). Espelette pepper is available at gourmet spice stores and online. Our photo shows a sprig of rosemary, but there’s no rosemary in the recipe.
But if you want to try these at Southern Art, you better hurry in. Soon the truffle deviled eggs will leave the menu, replaced with pimento deviled eggs served with a crisp Cheddar wafer.
Southern Art’s Black Truffle Deviled Eggs
- 12 boiled eggs, peeled
- 3 tablespoons mayonnaise
- 2 tablespoons truffle oil
- 1 teaspoon yellow mustard
- Salt
- Shaved truffle, espelette pepper, chives, for garnish
- Cut eggs in half across the width and remove the yolks. Rinse the whites to remove any egg yolk that remains behind. Cut a small sliver off the end of the egg white so the half will stand upright. Set aside.
- Make filling: Put the yolks through a sieve. In a medium bowl, combine sieved yolks, mayonnaise, truffle oil and mustard. Taste filling for salt. Move filling to a piping bag. Pipe rosettes of filling into hollow of egg whites. Dust with espelette pepper and garnish with chopped chives and truffle shavings, if desired. Serve immediately. Makes: 24
