No matter where you live in the U.S., June means one thing: summertime, with all its backyard barbecues and beach trips and lounges in the sun. That also means it’s time for refreshing drinks that go easy on the booze but big on the tropical flavors.

A new seasonal cocktail, the Swift Republic, from Austin’s the Blackheart, fulfills our wishes for such a refreshing liquid antidote, while also proving that darker spirits like single malt whiskey can still have a place on the bar shelf during the summer months when we trend toward unaged spirits like white rum, gin and blanco tequila.

The Swift Republic is made with Swift Single Malt as well as Giffard Banane du Bresil Liqueur, giving the cocktail a sweet tropical flavor and bringing out the notes of vanilla and peaches. Served in a chilled glass, this cocktail is perfect to sip on a hot summer evening. (Making sure the glass is properly chilled is actually a key element to this drink. It provides the Swift Republic with just the right amount of balance.)

The Swift Republic

2 oz. Swift Single Malt

1/2 oz. Giffard Banane du Bresil Liqueur

2 dashes Fee Brothers Peach Bitters

2 dashes Fee Brothers Black Walnut Bitters

2 to 3 drops vanilla extract (adjust to taste)

1 sugar gummy peach candy

Combine all ingredients (minus the candy) into a mixing glass. Stir for about 30 seconds. Pour into a very chilled champagne coup or small martini glass.

Garnish with peach candy.
