Bourbon, as America’s so-called native spirit, is so beloved here that we devote a whole month — not just a fake national holiday — to honoring the aged whiskey. In 2007, the U.S. Senate made it official by declaring September National Bourbon Heritage Month.

So during this time, we’ll celebrate — responsibly, of course — by enjoying bourbon straight or in cocktails like the ones below. These hail from Jack Allen’s Kitchen in Austin, which is highlighting our love for American whiskey with a menu of bourbon cocktails.

The Bonnabel and the Texas Sour are two very different drinks. The first one is a boozy stirred potion mixing in the Eagle Rare’s notes of honey and toasted brown sugar with sweet cherry and yellow chartreuse, while the second one is a refreshing and citrusy blend of red wine and Austin-based Treaty Oak’s crisp and fruity bourbon.

The Bonnabel

1 1/2 oz. Eagle Rare 10 year Bourbon

1/2 oz. Carpano Antica

1/4 oz. Luxardo Maraschino Liqueur

1/4 oz. yellow chartreuse

In a rocks glass, add all of the ingredients. Stir approximately ten times, reaching around the edge of the glass each time. Garnish with a speared maraschino cherry on top.

Texas Sour

2 oz. Treaty Oak Red Handed Bourbon

1 oz. simple syrup

1 oz. lemon

1/2 oz. egg white

1 oz. Malbec

Add a scoop of ice, Red Handed Bourbon, simple syrup, lemon juice and egg white in a shaker tin. Shake and strain over rocks glass with fresh ice. Float Malbec wine on top. Garnish with speared maraschino cherries.
