Q: West Cobb Diner is great! They have a burger with fried green tomatoes and bacon slaw among all the toppings. It was so big I had to take it apart to eat — and all the separate parts were delicious! I especially liked the bacon slaw. I would love to make it at home! Could you please get the recipe? A: Loren and Chad Martin, owners of West Cobb Diner, sent us the recipe for their bacon slaw, served on their Pimento Cheese burger and occasionally ordered as a side dish. The burger and slaw are also on the menu of the Martins' new restaurant, Southside, which opened in McDonough in March.
West Cobb Diner’s Bacon Slaw
3/4 pound bacon, cut into 1/2-inch dice
1 medium head cabbage
3/4 cup mayonnaise
1/4 cup plus 2 tablespoons honey
Heat a large skillet over medium-high heat. Add diced bacon and reduce heat to medium. Cook until bacon is crisp. Remove bacon and drain. You should have about 1 cup crumbled bacon. Reserve bacon fat for another use.
While bacon is cooking, cut cabbage in half and remove core. Thinly slice cabbage leaves and put in large bowl. You should have 8 cups.
In a small bowl, mix mayonnaise and honey. Pour over shredded cabbage and toss together until cabbage is evenly coated. Add crumbled bacon and toss. May be made up to 4 hours ahead. It will hold longer, but bacon will lose its crispness as it sits. Makes: 8 cups
Per 1/2-cup serving: 222 calories (percent of calories from fat, 76), 7 grams protein, 7 grams carbohydrates, trace fiber, 19 grams fat (5 grams saturated), 22 milligrams cholesterol, 400 milligrams sodium.
