Q: We love eating at The Big Ketch Saltwater Grill. The food is freshly prepared and they offer dining items for a variety of dietary needs. Everything there is delicious and they use a variety of spices to season their food and to make their own condiments. We love their Low Cal Greek Vinaigrette. It is creamy and full of herbs. A: Chef Garrett Teckmyer of The Big Ketch Saltwater Grill sent this recipe and wrote, "We were inspired to make this dressing for a New Year's resolution that everybody has — losing weight. Two years ago we created this dressing to pair with a salad we already had on our menu, and turned out to be a big hit. It's so delicious, everyone should try it."

The Big Ketch’s Low Cal Greek Dressing

1 tablespoon minced onion

2/3 cup white balsamic vinegar

2 tablespoons Dijon mustard

Pinch salt

Pinch pepper

6 tablespoons dried oregano

3 tablespoons chopped fresh garlic

1 cup non-fat Greek yogurt

1 cup olive oil

Spray a small skillet with cooking spray. Add onions and saute over medium heat until translucent, about 5 minutes.

In the jar of a blender, combine sauteed onions, vinegar, mustard, salt and pepper. Run blender until mixture is smooth. Then add oregano and garlic and blend again. Add yogurt and blend, then using the hole in the blender lid, slowly add olive oil. Taste for seasoning. Will keep up to 4 days. Makes: 3 cups

Per 1-tablespoon serving: 50 calories (percent of calories from fat, 88), trace protein, 1 gram carbohydrates, trace fiber, 5 grams fat (1 gram saturated), trace cholesterol, 14 milligrams sodium.
