Siblings Mikka and Trent Bramblett are part of a small family dynasty that's serving food in the historic district of Roswell. The two recently opened Ceviche at 963 Canton St., a few doors away from the restaurants their parents started — Magnolia Cafe and 946 South.

But this venture is all their own, with a concept they believe fits a niche on the street.

"We wanted to do authentic Mexican and it was a good fit for the area," said Trent Bramblett, who grew up in Roswell. "We thought it was something missing, and when this space became available, it was a no-brainer. We left the old historic building just the way it was so the place has a very laid-back feel."

But Ceviche isn't a fast-food, grab-and-go taco joint. This full-service space serves a full range of Mexican dishes, including the signature ceviche.

"Ceviche is a dish that originated in Peru, but it's also done in Mexico," Trent said. "And we worked with our chefs to come up with a few of our own."

So while most diners may be most familiar with shrimp in the ceviche style, that marinates fish in a citrus-based sauce, they'll find more options getting the ceviche treatment, including grouper, octopus and tilapia.

From the menu

Start off with plates of the aforementioned ceviche, as well as oysters on the half shell, garlic shrimp and dips of cheese or guacamole. Salads are topped with mangoes, Mexican chiles, jalapeno or tomatilla salsa. Poblano soup with shrimp and crab meat, chicken tortilla soup and a beef stew come in cups or bowls.

Among the best-selling dishes are the fish tacos, three corn tortillas wrapped around fried tilapia with cheese and a poblano cream sauce. Another is the chicken enchiladas verde, slices of chicken smothered with tomatilla sauce and topped with sour cream, tomatoes, onions and cheese.

Tostadas, burritos, chimichangas, quesadillas and fajitas arrive with rice and beans and fillings of beef, chicken, shrimp or grouper. Other entrees are a grilled tilapia with tomato sauce; pork ranchero; and shrimp sauteed with Mexican chiles, onions and garlic.

Kids who don't go for the scaled-down quesadillas, tacos or taquitos with shredded chicken may opt for a plain old burger.

From the bar

Forgo the small list of red and white California wines or the sampling of bottled and domestic beers and head right for the margaritas. Ceviche's versions come frozen or on the rocks and with a range of ingredients. The hottest is the pomegranate, but there's also coconut, green melon, peach, mango, strawberry and raspberry. Others are whipped up with various tequilas and different mixes. There's also a list of mojitos made with fresh mint and lime.
