This dish brings flavors of South America to Atlanta

Dish of the week: Flavors of the Andes bowl from The Roast

Whole Foods Market opened its first free-standing restaurant in Atlanta on June 1. The Roast is a fast-casual eatery focused on the Brazilian style of grilled meat known as churrasco.

The restaurant offers a variety of bowls, including a featured chef bowl. Currently that would be "Flavors of the Andes," a creation by Atlanta chef and restaurateur  Kevin Gillespie . The South American inspiration layers roasted Peruvian purple potatoes, golden beets and tri-color quinoa over Peruvian red chicken. The dish is dressed with aji amarillo pepper sauce and garnished with roasted peanuts and fresh mint. While peanuts and mint are optional, they do add flavor and texture.

Like other fast-casual eateries the bowl is made-to-order, so you can watch, step-by-step, as ingredients transform into a dish. The chicken comes right off of a roasting spit and is tossed in the aji amarillo pepper sauce a,long with the potatoes and beets before being served over quinoa. Bowls cost between $7 and $8.

The Roast is open to the public from 11 a.m. to 11 p.m. daily.
