DISH OF THE WEEK: Smoked beet & bean spread at Twain's Brewpub & Billiards

Hummus and pita, pretzels and cheese sauce, chips and salsa…All of these are classic dipping duos, and each holds a place in our hearts. But for something unexpected, we can't beat the smoked beet and bean spread at Twain's Brewpub & Billiards.

Chef Savannah Sasser's new offering among appetizers gets a nod for hitting the senses with outstanding taste, color appeal and varied texture. A thick pink puree of mildly seasoned beets and white beans is the base for small finger nibbles – tidily arranged in rows – of curried, candied pecans and crunchy fried white beans. On the side is a small pile of cheese straws holding the flavors of Grana Padano bursting with cheese flavor as addictive as any bag of Cheez-Its, and resourcefully made with spent grains from Twain’s brewing operation.

Sustainable, seasonal, creative and delicious – this spread is a showpiece for what brewpub food can be.

For a double dose of beet, pair that plate with the Great “Beet” Contract – the name inspired, as all cocktails at this Decatur spot, by works from Mark Twain. In a time when too many ingredients are doing drinks more harm than good, this gin cocktail is refreshingly minimalist with just Hendrick’s, lemon juice, a touch of sweet beet simple syrup and a dash of orange bitters.
