The new space is 5,200 square feet, allowing chef Scott Smith to expand his kitchen and utilize a fryer — meaning the restaurant will have french fries for the first time.
In addition to fries, the restaurant will serve up its acclaimed burgers , as well as salads, sandwiches, smoked meats and appetizers, as well as craft beers, custom cocktails and wine.
Owners Ben Bailey and Chris Collin plan to turn Local Republic's previous building on W. Crogan Street into a concept called Strange Taco Bar, which Bailey likened to a Bartaco. The restaurant served its last meal in the Crogan location on Saturday, closing its doors after six years in business.
