Employees at a Zpizza in Suwanee received food safety training following a failing routine health inspection.
Pizza screens as well as dough and flour used in the pies were not protected from contamination, according to the inspection report.
One employee swept the kitchen floor, worked the cash register then handled clean pizza screens without first washing hands, the Gwinnett County inspector said.
A container of clean pizza screens was stored on the floor under the pizza oven. Bulk containers of dough and flour were stored on the floor in the walk-in cooler and in dry storage.
Zpizza, 1039 Peachtree Industrial Blvd., received a health score of 42/U, falling from a previous score of 100/A. Because the restaurant had so many risk factors, the food permit was suspended and on-site training was provided.
Among other code violations, raw produce was not washed before being prepped. Dirty dishes and a bucket and wiping cloths used for sanitizing were stored in the vegetable sink.
Marinara sauce and a meatball sauce in the hot holding unit had no time control documentation. The food was discarded. Prepared pizzas were also discarded because they had been away from a heat source for more than four hours.
Points were also taken off because chemical spray bottles were stored next to clean dishes. Bulk products, removed from original packages, were not properly labeled. Food in boxes and open plastic bags were stored under a condensation leak in the freezer.
Zpizza will be re-inspected.
