GARLIC-BASIL TOMATOES WITH MOZZARELLA

INGREDIENTS:
4 medium tomatoes, cut into 1/4-inch slices
1/4 cup plus 1 tablespoon olive or vegetable oil
3 tablespoons red wine vinegar
1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves
1/8 teaspoon salt
3 drops red pepper sauce
2 large garlic cloves, finely chopped
8 ounces fresh mozzarella cheese, sliced
Salad greens, if desired
PREPARATION:
1. Place tomatoes in glass or plastic dish.
2. Shake remaining ingredients except cheese and salad greens in tightly covered container. Pour over tomatoes. Cover and refrigerate at least 3 hours to blend flavors, turning occasionally.
3. Layer cheese alternately with tomatoes on salad greens.
COOK’S NOTES:
Purchasing: The fresh mozzarella cheese called for in this recipe is a soft white cheese with a mild, delicate flavor. It has a different flavor than regular mozzarella and can be found in Italian markets, cheese shops and some supermarkets.
To reduce the fat in this dish, choose mozzarella made with part skim milk.
Variation: Tomato and mozzarella pitas are as easy as serving this fragrant mixture in pita bread halves.

CHICKEN WRAP WITH CALIFORNIA DRIED PLUMS AND APPLES

INGREDIENTS:
2 ounces low-fat cream cheese or Neufchatel cheese
2 (10-inch diameter) whole wheat, spinach or tomato wraps
1/2 cup chopped California dried plums
1/4 cup chopped apple
1/4 cup chopped celery
6 ounces shredded or diced grilled chicken breast
PREPARATION:
Spread 1 ounce cream cheese on bottom half of each wrap. Scatter dried plums, apple and celery over cream cheese; arrange chicken on top. Fold in sides, then roll up from the bottom, burrito-fashion, to completely enclose filling.
Serving size is one-half of a wrap.

LIMEADE MILK CHILLER

INGREDIENTS:
2 cups fat-free milk
2 cups lime sherbet
1/2 cup frozen limeade concentrate, not thawed or diluted
Lime slices (optional)
PREPARATION:
Place milk, sherbet and limeade concentrate in blender container. Cover; blend until smooth. Pour into frosted glasses; garnish with lime slices if desired.
