There's no aroma of food in the oven or robust wine and cheese served at Oli & Ve, but the Roswell tasting shop is sure to excite your senses with samplings of extra virgin olive oil and balsamic vinegar.

Each olive has its own distinct flavor, just like a grape, says co-owner Suzanne Davidson. A olive varietal to sample may be a walnut or truffle flavor, or become a fused oil such as blood orange, which makes for a great drizzle over salmon.

There's also aged balsamic vinegars to stir your palette.

"We want customers to walk in the door, be wowed, have a great experience and leave extremely satisfied," says partner Deborah Hardee.

In addition to Roswell, Davidson and Hardee own locations in Buckhead and Vinings. They started Oli & Ve (pronounced Ollie and Vee) in 2012.

"We are considered an ultra premium shop, which holds us to the highest standards in the world when it comes to olive oil," Davidson says.

The store imports premium oils from Italy, Chile, Spain, Tunisia, Australia, Argentina, Portugal and California when they're in season. "October through December, we import from the northern hemisphere, and April through June, we import from the southern hemisphere," Davidson says.

In addition to olive oils and balsamic vinegars, the tasting shop sells pastas, honeys, jams and spices, wooden kitchen accessories, pottery and hand-blown vinegar bottles.
