My family and I found an incredible Italian restaurant where everything on the menu is a good choice. Sal's Italian Ristorante in Coral Springs and Delray Beach, Florida, has a delicious eggplant garlic soup. Although the restaurant has several locations, the soup is a seasonal item on their menu and we can get there only when we can get to visit family, and only at the correct time. I've tried reproducing the soup, but nothing comes even close. Do you think that you can get this recipe? Hungrily awaiting your reply. — Paulette K. Westerman, Sandy Springs
Eggplant soup? Yes, absolutely. We’ve cut this recipe to a quarter the size they make at the restaurant, but it’s so delicious you just might want to double it. Everyone who tried it loved it.
Danita Farrell of Sal’s Italian Ristorante was happy to send us this recipe and the accompanying photo. She told us it isn’t actually a seasonal soup. “We used to prepare and serve it occasionally since we rotate a daily soup in addition to our Pasta Fagioli , but it is so popular that we try to have it available daily (at least at the corporate locations at Palm Beach Gardens, Coral Springs and Sunrise). Corporate chef Randy McCartney tried it back in the day somewhere and liked it so he recreated it to the best of his ability and that’s what we now serve.”
Like many restaurants, Sal’s uses a blended oil that is 20 percent extra virgin olive oil and 80 percent vegetable oil. For the same amount used in this recipe, you can use whatever oil you have on hand and prefer. If you’re not familiar with vegetable base, it’s a soup- or stock-making starter available in the canned soup section of your grocery store.
