Potato croquettes sound like something from a century ago, but the Panzerotti at Varuni Napoli in Morningside is an appetizer that is light years ahead of anything my grandmother would have made. Will they share the recipe? — Claudia Kopler, Atlanta

Potato croquettes are indeed an old-fashioned treat. Varuni Napoli’s Panzerotti are based on a Varuni family recipe that has been passed down from generation to generation. Chef Luca Varuni has very fond memories associated with this recipe because his grandma would cook it for him and his brother every Sunday while they were growing up. Now he and his chefs prepare them for you.
