St. Patrick’s Day doesn’t have to mean a splash of bright green food coloring in your shot of Irish whiskey or beer. It doesn’t even have to mean chugging that heady mixture of both beer and whiskey — with a half-shot of Irish cream liqueur for good measure — that’s known as the Irish car bomb.

Instead, get a little more sophisticated with your emerald-hued celebrations and try cocktails like the ones below instead. That’s not to say you can’t include a beer with your spirits. Just leave the dye job behind.

Old Thyme Sour

2 oz. Bushmill’s Irish Whiskey

1 oz. St. Germain Elderflower Liqueur

1 oz. green chartreuse

1 oz. fresh lemon juice

Pinch of cinnamon

Combine ingredients together and dry-shake. Then add ice and shake thoroughly. Pour into old-fashioned glass and fill with fresh ice.

Shamrock Shandy

1 oz. Bombay Sapphire Gin

3/4 oz. fresh lemon juice

1/2 oz. simple syrup

1 bottle Belgian-style wheat beer

Combine the gin, lemon and simple syrup together and shake well. Top with beer.

Pot O’ Gold

1 oz. Bombay Sapphire Gin

1/2 oz. Limoncello

1 heaped barspoon of lemon curd

Garnish mint sprig

Place ingredients in a shaker filled with ice. Shake vigorously, then pour into a chilled martini glass. Garnish with a sprig of fresh mint.
