It might not be scarf weather just yet, but we’re ready to get in the mood for the colder months ahead. Prepare yourself with this cocktail from Eureka!, a restaurant located in California, Texas and Washington.
Available there through Nov. 30, the Scarves and Yoga Pants drink is also perfect for curling up with at home. And if you have leftover pumpkin spiced simple syrup, don’t worry — this seasonal ingredient can be added to many other fall-flavored foods and cocktails. Just get creative.
Scarves and Yoga Pants
1 1/2 oz. Rittenhouse Rye Whiskey
1 oz. pumpkin spiced simple syrup (see below)
1/2 oz. orange juice
1/2 oz. lemon juice
1/4 oz. heavy cream
3/4 oz. egg whites
2 dashes herbal bitters
Combine all ingredients in a shaker and dry shake vigorously. Then, add ice to the shaker and shake for 10 to 12 seconds. Strain into cocktail glass, add ice and garnish with a luxardo cherry.
Pumpkin Spiced Simple Syrup
1 1/2 cup water
3/4 cup brown sugar
1 cup granulated sugar
2 tsp. ground cinnamon
1/4 tsp. fresh grated ginger (use a microplane)
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1/4 cup pumpkin puree
1 1/2 tbsp. vanilla extract
Add water and both sugars to saucepan and simmer for 4 minutes or until sugar dissolves. Turn heat down to low and whisk in ginger, cloves, nutmeg and pumpkin puree. Simmer for 10 min; do not bring to boil.
Remove from heat and strain through cheese cloth and mesh strainer. Allow syrup to cool to room temperature, then mix in vanilla extract.
