Recipes for eating the Three Sisters exist for both summer and winter squashes, and can incorporate both dry beans and string beans.
But in summer, when everything is fresh, the winning Three Sisters combination is a version calabacitas that’s made with a base of fresh corn, summer squash, and string beans.
While summer is almost over, these ingredients can be found in great, and often cheap quantities at the farmers market until the first hard freeze of the fall. They can be purchased, blanched and frozen, and used to make calabacitas all winter long.
With so many varieties of calabacitas (the vegetable) now overflowing their baskets at farmers markets, one can choose several varieties, for diversity of flavor, color and texture. It’s fun to have a diversity of squashes, and you might want to cut them into extra large chunks to show off the diversity. When shopping, the younger specimens are typically the best choices, as they are most tender. If they’re being sold by the pound, there’s no reason not to choose the smallest calabaciatas you can find.
Calabacitas is usually a pan-fried dish, but it can be made in other ways too. I like to oven roast the corn while it’s still on the cob, before I remove the kernels. It adds a mildly smoky taste to the calabacitas. Since I’ve got the oven on for that purpose, I tend to make the whole dish in there.
To do it this way, place a baking pan with whole ears of shucked corn on a rack in the center of the oven, set to broil. Turn the corn frequently as it roasts to prevent burning. When browned, remove the corn ears and let them cool. Cut the kernels off the cob with a knife.
Meanwhile, chop the calabacitas into chunks of an inch or so. Drizzle the pieces with olive oil, sprinkle with salt and a little oregano, and toss them with chopped onions and garlic. Chopped peppers (jalapenos are good) and cherry tomatoes can be added as well. Put the mix to the oven, stirring often. When the squash pieces are nearly done, add green beans, chopped into roughly half-inch pieces, and the roasted corn, and broil a little longer.
You can also add cheese, like cheddar or jack, and mix it into the vegetables for the final few minutes so it can melt.
I’ve noticed that this calabacitas mixture goes well with chicken and turkey. I’ve used it as a stuffing for baked birds, and added it to chicken and turkey soups. I’ve also made it with pan-fried rice noodles and oyster sauce.
For those more interested in a straightforward recipe for calabacitas than the play-by-play of my various experiments, here’s a basic recipe for a classic skillet version of the dish, which I call:
Three Sisters in a Pan
3 Tbsp. elive oil
1 large onion, chopped
3 garlic cloves, minced, pressed or mashed
2 lbs. calabacitas, cut into 1-inch pieces
Kernels from two ears of corn (or 2/3 cup frozen kernels)
1/2 cup coarsely chopped green beans
6 oz. queso fresco (Cheddar or jack, while very different, can be substituted in a pinch.)
If you want to prime the pan with chopped bacon I won’t blame you. Otherwise, sauté the onions in oil on medium heat. Add garlic when the onions become translucent. When the garlic becomes fragrant, after a few seconds, add the summer squash. Stir occasionally until squash is nearly tender. Add corn and beans. Continue cooking a few more minutes, until the corn and beans are ready. Remove from heat. Crumble in queso fresco, or grate in your other cheese.
Serve with hot sauce, if you didn’t already sneak in some chile peppers or powder along the way, as you should have.
