Executive chef Ian Winslade was happy to share. As our reader says, this apple pie was on the Mission + Market fall menu last year. This year fall has been so slow to arrive that Winslade may move right from summer desserts to winter desserts as soon as the weather cools. He’s planning Tres Leches and Cocoa Bread Pudding with Caramel Ice Cream, Valrhona Chocolate Torte and Butter Pound Cake with Bourbon Cream Sauce.
This apple pie is a top crust-only version with just enough spice and the surprise of golden raisins to update a classic. Fuji apples provide just the right tart/sweet balance. If you go with a sweeter apple, you may want to cut back a bit on the sugar.
