Pricci’s executive chef Piero Premoli tells us that Rigatoni Alla Norma was named after Vincenzo Bellini’s opera “Norma.” “Nino Martoglio, a renowned Sicilian playwright and director gave the pasta dish that name because he was enthralled with the recipe’s complexity and beauty, as complex and beautiful as the opera.”
At Pricci, you’ll be served this dish with house made rigatoni. And you shouldn’t be surprised that Premoli recommends using Italian eggplant, if you can find it. We actually found the recipe to be easy for the home cook to recreate so enjoy it with local eggplant this summer.
