Replacing Richard Blais of "Top Chef" fame, chef Wesley True takes over as executive chef at The Spence , as of today, according to Concentrics Restaurants .
As chef/owner of TRUE in Mobile, AL, Wesley was a semi-finalist for the James Beard Award “Best Chef South” and has been featured in publications including Southern Living, Garden & Gun, and USA Today.
"I am very excited to hit the ground running in Atlanta. The Spence’s creative spirit is something I can relate to and I look forward to continuing the tradition of unique ingredient driven cuisine, " True said in a press release.
The release also noted that Blais, a full time resident of Southern California, is leaving to focus on other projects, including future work with Concentrics Restaurants.
Born and raised in Mobile, Alabama, True attended the University of Mississippi, where he began cooking at John Currence’s City Grocery as a part-time job. True enrolled at the Culinary Institute of America, and following graduation, worked at restaurants in New York City, including Danube, Bouley, Aquavit, Mesa Grill and Public Restaurant.
