Chicken wings at a J Buffalo Wings in Cumming were being mixed with sauce in a dirty container during a recent routine inspection.

According to the inspection report, the containers had been used the night before, and the employee preparing the wings said he was the only one who washed the containers and he didn’t have time to do it. The inspection was conducted during a busy lunch time from 12:15 p.m. to 1:40 p.m.

The Forsyth County health inspector said the mixing dishes should be washed, rinsed and sanitized every four hours.

J Buffalo Wings, 911 Market Place Blvd., scored 50/U, falling from previous scores of 90/A and 74/C.

Points were also taken off because raw chicken wings were being thawed on different surfaces throughout the kitchen. The inspector said only approved methods should be used for thawing potentially hazardous foods, so the wings were placed back into the freezer.

In other code violations, packages of butter had evidence of a mold-like substance. Gyro meat, sliced off a vertical spit and held on the counter top, was not at a safe temperature. It was discarded.

Other cold foods were also out of temperature range. Raw chicken, raw eggs and cooked rice, also on the counter, were discarded.

The inspector said one of the food prep employees put on a hat and continued cooking without washing hands. Also, a bottle of unlabeled medicine was stored with food and single service items. It was moved to another area.

J Buffalo Wings will be re-inspected.
