A: Gloria, while a whole brisket can weigh in at around 10 pounds, a second cut with a little bit of the deckle (a flap of meat) left on will top out at about 6 pounds. This cut contains more fat than the first cut, but it’s also considered the more flavorful piece of beef. Q: My friends and I are huge fans of the lap-size bamboo trays. These trays used to be readily available at Pier 1 Imports and a few other stores for around $5 to $7.
