Q: When we think of going out for Mexican food, we always think of El Ranchero in Marietta. It is the best authentic Mexican food we have ever had. It is fresh, tasty and consistently great. We like all their food but would like to make their cheesy bean dip occasionally at home. Is there a chance you can persuade them to part with this recipe? — Brenda Littell, Kennesaw

A: Well, now you won't have to make the drive whenever you get the urge for this great appetizer. You can modify the proportions to suit your taste or add some diced jalapenos if you want to spice it up a bit.

Cheese and Bean Dip

4 ounces Oaxaca cheese, grated

4 ounces Monterey Jack cheese, grated

1/4 cup milk

1 cup refried beans

In a saucepan, preferably nonstick, combine Oaxaca and Monterey Jack cheeses and milk and stir until cheese has melted.

Add beans and stir until warmed through.

Serve with chips. Serves: 4

Per serving: 275 calories (percent of calories from fat, 59), 17 grams protein, 12 grams carbohydrates, 3 grams fiber, 18 grams fat, 62 milligrams cholesterol, 534 milligrams sodium
