We’re glad you enjoy this column and glad there are so many generous people like John Metz, executive chef for Marlow’s Tavern, who are happy to share their recipes. This risotto is offered as a side dish but is not always available. Metz says if you give the manager at your favorite Marlow’s Tavern location a little notice, they’d be happy to make it especially for you.
When you make this at home, heed the advice of the chefs and be very vigilant with your stirring as you’re working with high heat.
