Lauren Williams: The Beeter at Victory Sandwich Bar. As more chefs focus on applying their skills to veggies, this vegetarian option with white kimchi and Thai pepper mayo hits it out of the park.
Thomas Watson: The Sake Aioli at Umi is part of the Sousaku Nigiri. The cured Scottish salmon with garlic aioli, lime and caviar blankets little pillows of rice.
Edward Wyatt: The tea-smoked duck from Gu's Bistro is one of my favorite dishes because it is just so succulent and delicious (obviously). It isn't the heavily sauced duck you normally get in a Chinese restaurant, but perfectly cooked, tender and juicy, with a hint of smoky tea and crispy skin.
