Juan Jose "JJ" Cuevas is the executive chef of the Condado Vanderbilt Hotel in San Juan, Puerto Rico. As a result of Hurricane Maria, Cuevas has seen numerous farmers on the island plant fast-growing crops not found in traditional Puerto Rican cuisine.
