South City Kitchen's executive chef Chip Ulbrich shares his flavorful recipe for grits below.
South City Kitchen’s grits
Servings: 4
Ingredients
1 cup heavy cream
3¼ cups water
1 cup Red Mule grits*
4 Tbsp. butter
Salt, to taste
- In a heavy saucepan, heat the cream and water over medium heat 10 minutes, until the liquid begins to simmer.
- Stir in the grits. Lower the heat and cook 20 to 25 minutes, or until the grits are tender and smooth. Stir occasionally to avoid scorching.
- Add the butter and salt, stirring until the butter has melted.
- Serve warm as a side or top with sautéed shrimp.
