Soup, salad and bread to replace bagels in The Canteen at Tech Square

Micro food hall The Canteen in Tech Square is replacing one concept with another.

TGM Soup Co. will take the place of TGM Bagel starting this Monday, joining Fred's Meat & Bread, Yalla and Square Bar.
TGM Soup Co. will bring to The Canteen the soup, salad, and bread pop-up that has been running since 2016 at TGM Bread, the bakery operated by and next door to The General Muir at Emory Point.
"The soup pop-up next to The General Muir was a way to enhance the lunch offerings and activate our wholesale bakery space during the day," partner and chef Todd Ginsberg said in a prepared statement. "It has been more popular than we anticipated at The General Muir, so we decided to name it and give it some additional permanence with a second home at The Canteen."

TGM Soup Co. will offer a variety of soups including tomato bisque, chicken and mushroom, Italian Wedding Soup, and brisket chili, each paired with a TGM Bread-baked selection including asiago levain, cranberry walnut, pain au levain and French baguette A variety of ready made salads will also be available.

In addition, Ginsberg will serve bone broth with a rotating selection of add-ins such as parsley and lemon or miso and shiitake mushrooms, and TGM Soup Co. will carry a selection of TGM Bread loaves and rolls.

Partner Shelley Sweet said the change was due in part to the large lunch crowd in the Tech Square area.

"Changing the format in this way allows us to offer more options to our guests when they really want it," she said in a statement. 
TGM Soup Co. at The Canteen will operate from 11 a.m.-3 p.m., with pre-packaged soups, salads and bread to go from Square Bar after 3 p.m.

The soup pop-up at TGM Bread will continue to operate regularly from 11:30 a.m.-1:30 p.m. Tuesday-Friday and will take on the TGM Soup Co. branding.

The Canteen is open from 11 a.m.-3 p.m. Monday and 11 a.m.-8:30 p.m. Tuesday-Saturday.

In addition to The General Muir, TGM Bread and The Canteen, Ginsberg, Sweet and Jennifer and Ben Johnson are also slated to open Woods Chapel BBQ in Summerhill later this year. Sweet and the Johnsons are also partners in West Egg Café.
