Owners Billy and Kristin Allin and bakers David Garcia and Abigail Quinn of Cakes & Ale restaurant and Café Cakes & Ale in Decatur will soon open Proof Bakeshop in the former Dough Bakery space on Hurt Street in Inman Park.

Soft opening is set for 7 a.m. on May 11, with the “official” opening a week later at 7 a.m. on May 18.

Look for croissants, scones, bagels, donuts, muffins and pastries made with real butter, organic flour, and an emphasis on traditional baking techniques. Other goodies will include hand pies, cream cheese and fruit jam Danishes, French macarons, and vegan and gluten free options.

Beyond serving as a traditional neighborhood bakery, Proof will supply baked goods to Cakes & Ale and the Allin’s upcoming Inman Quarter European-style cafe, Bread & Butterfly.
