Earlier today, Gina and chef Linton Hopkins announced that they will open Hop's Chicken at the Ponce City Market Food Hall later this year.
According to the press release, the menu will include biscuits and breakfast sandwiches served all day, fried chicken by the piece, and a number of sides still under development. Hop's Chicken will open in the 400-square-foot space adjacent to the Hopkins' H&F Burger .

“I have been on a quest to create a fried chicken that is the perfect expression of this classic southern dish,” says chef Hopkins. “The key to doing it right, I’ve found, is taking the finest ingredients available and preparing them simply and honestly. Hop’s Chicken is an opportunity for us to deliver a delicious meal at a price accessible to everyone.”
Hopkins first garnered attention for his fried chicken when he added it as a weekly Sunday Supper special at Restaurant Eugene. It continues to be offered on a limited basis for select holiday weekends. He then added Nashville-style hot chicken to the menu at Holeman and Finch Public House, a dish that continually evolves with the seasons.
At Hop’s Chicken, guests can look forward to a menu consisting of Springer Mountain chicken fried to order and from-scratch biscuits. The selection of sides will include staples like coleslaw and macaroni and cheese, but also feature dishes that rotate with the seasons like tomato and cucumber salad and butterbeans in the summer and black-eyed peas and collard greens for the winter.
“I am happy the timing and location are right to turn our idea for fried chicken into reality,” says chef Hopkins.
