Taco Mac in Cobb re-inspected after failure due to moldy kitchen

Georgia has rules it requires every food service operation to follow. These are just a few of the many health and safety regulations.

A Taco Mac on Cobb Parkway in Smyrna passed its re-inspection after failing due to a dirty kitchen.

The eatery scored a 96 on Monday.

It was docked points for having an “accumulation of food debris” on serving utensils and a cutting board.

A Taco Mac location near Smyrna recently failed its health check in part because of mold and a dirty kitchen, according to a Cobb County health inspection report.

The store at 3101 Cobb Parkway SE scored a 63 last Monday. Any score below a 70 is considered failing.

There are about 30 of the eateries across the country; they serve tacos and wings and have lots of beer on tap for sporting events.

“Taco Mac takes this matter very seriously and has a senior management team at the restaurant correcting all items noted in the report. Additionally, we are retraining all employees. We hope to be re-evaluated later this week and expect a much-improved score,” CEO Harold Martin, Jr., said in a statement.

The restaurant was docked points for having an “accumulation of food debris on numerous plates/bowls stored as clean.”

“Unfortunately, some of the things were overlooked and were very correctable at the time,” said Kenny Lee, director of operations at the store.

The inspector saw “trash, food debris and standing water on floors, behind shelves, under equipment all throughout facility” in addition to walls stained with splatter throughout the building.

It also had mold on the inside of the ice machine. In addition, there were no thermometers in some coolers.

Lee told The Atlanta Journal-Constitution on Tuesday that the eatery was ready for re-inspection.

The store scored an 84 in September 2017 and a 93 in February 2016.

Follow-up inspections are usually done within 10 days of the original evaluation.
