We’ve run many hummus recipes in this column over the years, but this is the first time we’ve run a recipe in which the chickpeas are uncooked.

Jackie Hardin, granddaughter of Richard Thomas who founded R. Thomas Deluxe Grill back in 1985, was happy to share the recipe and the story of its creation. “We had started making the transformation to healthy/fresh food. The original recipe for our hummus kept spoiling quickly. Our executive chef, John Vo, knew that raw chickpeas would store longer and that raw food is a much healthier option. He played around with the chickpeas for a few weeks, letting customers and employees try it. This is the recipe that was loved the most.”

The higher powered your blender or food processor, the smoother the hummus will be. But because the dried chickpeas are soaked, but not cooked, it will probably remain a little chunky.
