I visited Java Cats Cafe for the first time. Along with the friendly visitors and the fluffy, friendly cats we were allowed to pet, I snacked on delicious cappuccino and a fresh blueberry scone. The food at Java Cats Cafe comes from Gathering Industries, an Atlanta-based nonprofit that works with people who need a second chance, training them for careers in the culinary world or for other positions. These scones are just one of the many offerings available at the cafe.

Amber West, Gathering Industries’ director of operations, provided this recipe and recommended that the scones be enjoyed right out of the oven. If you must make them ahead, keep them at room temperature. They will stay fresh for about two days. But she notes that scones freeze well and can be kept up to three months. If you can resist eating them all at once, freeze the leftovers and thaw your frozen scones in the refrigerator and then gently warm before serving. You can also make the scone dough ahead of time, freeze the shaped scones and then bake them when needed.
